We’re on the hunt for an authentic Restaurant Manager (Starting around July/August) to lead the way at our brand-new restaurant, part of our newest Dublin Capel street addition, opening in 2026.

The Concept

Nestled in the heart of Capel Street, our restaurant is an all-day hangout for locals, travellers and anyone who fancies staying a little longer than planned. Start with a coffee at the hatch, come back for lunch, and somehow end up at the bar in the evening. It is a space that moves with the day and comes alive through events and moments that bring people together, whether you arrive alone or leave with new friends.

The food is uncomplicated, seasonal and full of character, with a playful wink to Irish classics and a modern twist. Beyond the restaurant (42 covers) and bar (10 seats), there are two 8-person meeting rooms and a 12-person private dining room, making it just as good for getting things done as it is for celebrating them. Rooted in the neighbourhood and open to the wider Dublin community, it is a place to eat, meet, linger and return to again and again.

The Job

This is a unique opportunity to be part of launching a brand-new brasserie concept in the heart of Capel Street, Dublin, building a team from the ground up and shaping a destination that becomes a favorite for both locals and hotel guests.

Our Dublin brasserie will serve breakfast, lunch and dinner in a vibrant yet relaxed setting. While the kitchen operates behind the scenes, energy flows through the restaurant floor and out onto the street via our dedicated coffee hatch, offering high-quality takeaway coffee, pastries and light bites throughout the day.

We are looking for a Restaurant Manager who leads with enthusiasm, structure and purpose. You will oversee daily operations with precision, ensure exceptional guest experiences from morning coffee through to evening service, and cultivate a motivated, high-performing team.

You will play a key role in embedding the culture, service style and standards of The July, while ensuring the brasserie reflects the character and rhythm of Dublin.

You will report to the General Manager of The July Capel Street.

Job requirements

The Restaurant Manager must have:

  • The motivation and leadership skills to represent The July and its international connections with confidence.

  • Previous experience as a Restaurant Manager within a premium, high-volume, quality-driven restaurant or brasserie environment.

  • A keen eye for detail to consistently deliver brand and service standards.

  • A proven track record of recruiting, developing, motivating and retaining a high-performing front-of-house team.

  • A strong and confident leadership style, with the ability to oversee the day-to-day running of the restaurant and work closely with the Head Chef.

  • Exceptional communication skills - both verbal and written - to ensure clarity and alignment across departments.

  • The ability to multi-task and manage relationships effectively at all levels, from team members to senior leadership.

  • Strong financial acumen, including full understanding and ownership of the P&L.

Key Accountabilities:

  • Acting as the key leader of the front-of-house team, driving revenue, quality, service standards and guest satisfaction.

  • Leading, inspiring and motivating the team to achieve strong engagement, loyalty and retention.

  • Overseeing the smooth operation of breakfast, lunch and dinner service, as well as the street-facing coffee hatch.

  • Ensuring supply chain processes are effectively implemented and controlled in line with the concept and The July brand foundations.

  • Managing beverage performance and margins in line with agreed targets.

  • Collaborating closely with the kitchen team to ensure seamless service and consistency across all dayparts.

  • Embedding a culture of accountability, warmth and operational excellence from pre-opening through to full operation.
